Black Bean Stew

4 cups of cooked black beans

1 large onion, coarsely chopped

2 tablespoons of olive oil

4 garlic cloves, minced

1 medium red pepper, diced, optional

2 teaspoons of cumin, ground

2 teaspoons of smoked paprika, optional

2 cups of vegetable broth or water

1 can of tomato paste

Cilantro, as much as desired

Sauté onion, garlic, pepper and cumin until soft. Add beans, tomato paste, and broth or water. Bring to a boil. Reduce heat and simmer until liquid is reduced by half and a thick sauce is formed. Add salt to taste.
