Mix together the following ingredients:
Juice of 1 lemon
1 teaspoon finely grated ginger
1-2 teaspoons salt
½ teaspoon oregano
1 teaspoon Kome Miso
2 tablespoon olive oil
1 teaspoon finely grated garlic
¼ teaspoon cayenne pepper
1 teaspoon Italian Herbs
1 teaspoon paprika
Mix and pour over:
2 cups tofu, cut in ¾ inch cubes
Marinate for at least 1 hour, stirring occasionally.
Then add to the marinated tofu:
3 fresh tomatoes cut in wedges
3 cucumbers, cut in wedges
½ large red onion, cut in chunks
½ cup Kalamata olives
1 stick celery sliced (optional)
2 tablespoon chopped parsley
Toss and serve on a head of lettuce, washed and dried.
