1 bunch kale, (1 pound) shredded. Discard stems.
1/2 pound brussels sprouts, shredded
1/2 pound cauliflower, shredded
1 teaspoon salt, more if desired
1 tablespoon of Tamari or similar
1/4 cup nutritional yeast
1/4 cup fresh lemon juice
1/2 cup olive oil
1/2 cup red onion, coarsely chopped
1 small clove garlic, finely chopped
1/3 cup walnuts, pecans or almonds or any nuts, chopped
1 cup dried cherries or pomegranate or cranberry (optional)
- In food processor, using “S” blade, shred cauliflower, kale and brussels sprouts, separately. Place in large bowl. Combine lemon juice, olive oil, garlic, salt in small bowl. Set aside.
- Mix contents of both bowls together. Adjust salt to taste. Add nuts and your choice of berries. Set aside to let flavors blend. Serve.
