Kale Salad

1 bunch kale, (1 pound) shredded. Discard stems.
1/2 pound brussels sprouts, shredded
1/2 pound cauliflower, shredded
1 teaspoon salt, more if desired
1 tablespoon of Tamari or similar
1/4 cup nutritional yeast
1/4 cup fresh lemon juice
1/2 cup olive oil
1/2 cup red onion, coarsely chopped
1 small clove garlic, finely chopped
1/3 cup walnuts, pecans or almonds or any nuts, chopped
1 cup dried cherries or pomegranate or cranberry (optional)

 

  1. In food processor, using “S” blade, shred cauliflower, kale and brussels sprouts, separately. Place in large bowl. Combine lemon juice, olive oil, garlic, salt in small bowl. Set aside.
  2. Mix contents of both bowls together. Adjust salt to taste. Add nuts and your choice of berries. Set aside to let flavors blend. Serve.
